Dried fruits and vegetables

At Lambton Intelense, we harness AI-powered technology to elevate the dried fruits and vegetables processing industry, ensuring superior quality, maximum yield, and operational efficiency. From sorting, slicing, and drying to packaging and quality control, our end-to-end solutions deliver consistent results with exceptional accuracy.

With Lambton Intelense, you benefit from cutting-edge AI technology that enhances quality control, productivity, and traceability. Whether you're processing mangoes, berries, tomatoes, peppers, or leafy greens, our solutions ensure exceptional dried fruits and vegetables ready for global markets.

The process

  1. Intake

The raw fruits or nuts are received from farms or suppliers and inspected for quality. They are then transferred using belt conveyors, hoppers, or pneumatic conveyors to the processing area, ensuring a smooth and hygienic material flow.

  1. Cleaning

Raw fruits or nuts are cleaned using air blowers, vibrating screens, and water washers to remove dust, dirt, stones, and foreign materials. Destoners and aspirators help separate heavier and lighter impurities, ensuring food safety and quality.

  1. Roasting and Pasteurization

Nuts and some dry fruits are roasted using rotary roasters, hot air ovens, or fluidized bed roasters to enhance flavour, texture, and shelf life. Later, dry fruits are treated with steam pasteurizers or infrared heating systems to eliminate harmful bacteria and ensure food safety without affecting taste and quality

  1. Blanching

Blanching is the process of briefly exposing nuts or fruits to hot water or steam using blanchers to loosen skins, deactivate enzymes, and improve texture. This step is commonly used for almonds, pistachios, and peanuts before peeling or further processing

  1. Drying

Blanched fruits or nuts are dried using hot air dryers, tray dryers, or tunnel dryers to remove excess moisture and improve shelf stability before further processing.

  1. Cooling and Conditioning

Dried fruits or nuts are cooled using air coolers or cooling tunnels to prevent moisture condensation. They are then conditioned in controlled storage bins or chambers to balance internal moisture for uniform texture and extended shelf life.
